Hobbs’s Applewood Smoked Meats was born from a Northern California hobby that grew into a multimillion-dollar enterprise. Founder Hobbs Shore, a retired economist, started smoking meats for friends in 1980, eventually developing his signature “California-style” bacon. This renowned bacon is dry-cured in a special salt mixture, aged for two weeks, and then smoked with sweet applewood. As a quintessential Californian purveyor of smoked meats, Hobbs’s is a natural choice for us to source locally.
